“Caviar hasn’t always been expensive,” explains Jason Cohen, the founder of Nomad Caviar. “As recently as the late 1990s, it could be bought for as little as $50 for 500gm in countries like Azerbaijan. Going even further back, it was even sold as a bar snack in 19th century America for just a nickel. So, the luxury status of caviar is largely a modern development, driven by farming and marketing practices. Our mission is to challenge this market trend and offer caviar as it was always intended to be enjoyed – plentifully and certainly more than a mere mouthful.”

Jason first began purchasing caviar during the COVID-19 pandemic when he was confined indoors and needed the delicacy to offer his visiting friends and family. When his needs outgrew his budget, Jason took the bold step of cutting out the middleman and sourcing directly from distributors to obtain bulk pricing. Nomad Caviar was born from this vision to make caviar more accessible for everyone who appreciates its rich flavors and seeks to incorporate it more frequently in their daily diet.

“My first bulk order was for 10kg,” Jason recounts. “After contacting several friends, that order vanished as quickly as it arrived. Then we scaled up to 30kg, then 50kg, and finally 70kg, until the farm we were collaborating with suggested we formalize the relationship by launching our own caviar brand. Today, Nomad Caviar is a successful direct-to-consumer online luxury food retailer transforming the way caviar is enjoyed.”

The company’s Kaluga Hybrid caviar variety, available in shades of brown, boasts large roe, a full flavor with noticeable minerality, and a firm texture with a buttery taste and creamy aroma. This caviar is a product of the perfect union of two sturgeon species native to the Amur River basin: the Huso dauricus, a relative of Beluga and considered the largest freshwater fish in the world, and the Acipenser schrenckii (Amur) sturgeon. Nomad Caviar’s Ossetra, sourced from mature Acipenser Gueldenstaedtii sturgeon, features large roe, a firm texture that pops in the mouth, and hints of nuts in the aroma. Renowned among connoisseurs worldwide for its complex, robust flavor and versatility, Ossetra is one of the most sought-after caviars. Originally hailing from the Caspian Sea, Ossetra holds a rich history as a highly prized caviar. In recent years, production has shifted toward sustainable aquaculture farms to meet growing demand. The company has also launched a caviar tart, crafted in collaboration with dining institutions Le Bec Fin and Toto Private Chef. Each tart package retails for HK$3,888 and includes 125gm of NOMAD’s finest caviar, 125gm of Hokkaido Uni, delicate snow crab meat and cauliflower crème, a rich almond flour crust, and is garnished with vibrant shiso flowers.
